Maitake + Oyster Mushroom Frittata

Shake up your next brunch with a Maitake and Oyster Mushroom Frittata featuring R&R Cultivation's gourmet mushrooms! This savory dish, packed with umami and protein, is the perfect way to kick off your day. If you're into meal prepping for the week ahead, this recipe will produce 9 large servings that can be frozen and ready to reheat at a moment's notice!

Ingredients 

Maitake and Oyster Mushroom Frittata – makes 9 large squares 

  • 1 yellow onion, diced 
  • 1/2# oyster mushrooms, gently torn into 1 to 2 inch pieces 
  • 1/2# maitake mushrooms, gently torn into 1 to 2 inch pieces 
  • 12 eggs
  • 1 cup whole milk or alternative milk, such as cashew milk
  • 6 oz. feta, crumbled
  • 12-15 large basil leaves for homemade basil paste *optional 
  • .75 oz (or one small clam shell) chives, finely chopped 
  • Parmesan 
  • Olive or avocado oil 
  • Salt and pepper to taste 

Recipe Steps

Preheat your oven to 375° and grease a 9x13 inch oven-safe pan with cooking spray, oil or butter.  

Heat a skillet over medium high heat with a few healthy glugs of oil. Once hot, add your onion and mushrooms to the pan being sure to only stir occasionally. This will allow everything to get a nice golden brown color on them. This step will take anywhere from 5 to 10 minutes, depending on the size of your pan. Once you’ve achieved enough color to your liking, remove from heat and stir in salt and pepper. Set aside to cool.

If cooking with basil, use a mortar and pestle to smash your basil leaves with a pinch of salt until a paste is formed. Set aside.

In a large mixing bowl, crack your eggs and whisk vigorously until homogenous. Pour in your milk and whisk to combine.

Crumble in your feta and gently stir in your herbs. Season with salt and pepper to your liking.

Pour mixture into your prepared baking dish. Top with grated parmesan. 

Bake at 375° for 30 minutes or until golden brown and cooked all the way through. Serve while warm, garnished with a little extra parmesan and a sprinkle of chives. If you have leftovers, you can individually wrap portions and store them in the freezer. Reheat at 300° for 20-25 minutes. Enjoy!
