R&R Cultivation is Adding More Mushroom Varieties

December is a season of reflection, and our team has been busy reflecting on this year and how we envision the future. We’re feeling especially grateful for our clients, who have chosen to shop locally during the pandemic to support our small business and allow us to continue to grow. There is an ever-growing community of foodies and mushroom lovers in the Twin Cities who faithfully enjoy R&R Cultivation’s certified organic produce and are always eager to try new mushrooms!

As a direct result of your ongoing support, we’re thrilled to announce R&R Cultivation’s three new gourmet mushroom varieties: Maitake, White Beech, and Brown Beech. These varieties are now available everywhere you find our mushrooms, including farmer’s markets, co-ops, and Lunds and Byerlys stores in the metro area.

All About Our New Mushrooms

As is the case with all R&R Cultivation’s mushrooms, our new varieties are locally-grown, organic, and sustainably produced. We’ve always believed every community should have access to healthy and delicious produce, so we’re excited to bring more mushroom types to the Twin Cities’ many farmer’s markets, co-ops, and grocery stores. 

White Beech Mushrooms: Delicate and Delicious

White Beech mushrooms are sweet and buttery when cooked, which is appealing to folks who don’t enjoy the intense earthy umami flavors normally associated with mushrooms. Their unique flavor is also perfect for the devout mushroom eater who wants to experience the different flavor fungi has to offer! 

If you’re looking for a food that may help you maintain your youthful glow, look no further. White Beech mushrooms have high amounts of ergothioneine and glutathione, both important antioxidants that may slow the effects of aging. 

Brown Beech Mushrooms for Gourmet Mushroom Lovers

We’re offering both Brown Beech and White Beech mushrooms due to their distinct differences in flavor; where White Beech mushrooms are mild, sweet, and buttery, their brown counterparts are nutty with the classic mushroom flavor. Brown Beech mushrooms are widely used in fine dining because of their flavor and compact shape, which makes it easy to prepare them whole.

Beech mushrooms are a heart healthy food that may keep your arteries protected against plaque. They also contain beta-glucan polysaccharides, notable immunity boosters that may also be anti-tumor. These mushrooms are undoubtedly one of the tastiest ways to give your family’s immune system a helping hand!

Maitake: “Dancing Mushrooms”

This variety has earned the name “dancing mushrooms” in Japanese because foragers often danced with joy after finding this delicious and healthy mushroom growing in the wild. Maitakes taste woodsy, earthy, and slightly spicy when cooked, and their delicious flavor profile has made them a sought-after ingredient for chefs who want to create unique and tasty dishes. The fruiting bodies of the mushrooms grow in clusters that can weigh as much as 100 pounds! R&R Cultivation grows our maitakes to a more manageable size before harvesting them and selling them fresh to local customers. 

Maitake mushrooms have been widely known to have medicinal properties in Eastern medicine. Japanese studies have shown that regularly consuming maitake mushrooms may lower triglyceride levels and slow plaque buildup in the arteries. They’re also an extremely nutritious addition to any diet as they contain a number of vitamins and minerals, antioxidants, and amino acids.
